Cottage Cheese Ice Cream
Ingredients:
16oz. Full fat cottage cheese, Daisy brand
⅓ cup Guittard cocoa powder, cocoa rouge
1 tsp. Vanilla extract
3- 5 Tbsp. maple syrup
1 scoop Promix whey isolate protein powder
¼ to ⅓ cup natural peanut butter
¼ cup or more Guittard milk chocolate chips, chopped into small pieces

Directions:
Place the cottage cheese, vanilla, maple syrup in a high speed blender and mix until smooth. Add the cocoa powder and mix again. Then add the protein powder and blend one last time.

To make ice cream, pour the mixture into the cottage cheese container and drizzle peanut butter over the top. Sprinkle the chocolate chips on top and cover with a piece of parchment paper. Place the lid on top and if you have some sort of insulated bag, place the cottage cheese container into the bag and then into the freezer.

To make pudding, pour the mixture into a storage container and top with a drizzle of peanut butter and a sprinkle of the chocolate chips. This should last 4 or 5 days in the refrigerator.

Thanks for your version of this viral recipe. You definitely upgraded it! I finally took your advice to use Guittard Cocoa Rouge. Game changer!!! I prefer the pudding unfrozen version, plus you don’t have wait! I’ve also made your easy non-dairy and regular chocolate pudding recipes. With the cottage cheese version, I could still detect a bit of the twang of the cottage cheese. It was OK, but I think cottage cheese pudding would shine in recipes that include some lemon giving a cheesecake flavor and perhaps adding blueberries and strawberries. Your pumpkin mousse recipe is another of my favorites.

I've had the same experience with putting the ice cream in the freezer for that long. Even after three hours, it starts to get too icy and hard. I prefer the pudding.

I made this over the weekend and I loved the pudding! I didn't make it into ice cream because the pudding just looked so good. The peanut butter was such a great idea! I love those flavors together. I shaved chocolate on top and added slivered almonds. Soooo good! Thanks Robin! Also, your jokes were really good this week 😂 Thanks again!

I used cacao nibs. And your 1/4 cup maple syrup. Plus 1/4 tsp vanilla. Food processor... nice pudding, with tiny cacao flakes

Yum! You can actually make your own cottage cheese using vinegar water on the stove & milk. It's easy! Sometimes it turns out kind of like ricotta though.
