This is the perfect brekkie food/snack especially when you're on-the-go. 😊 We know that people are baking a lot these days so make this for breakfast on your next trip! 😋

CRANBERRY BREAKFAST MUFFINS ✨

1/2 cup almond nuts, chopped
3/4 cup all purpose flour
1/2 cup dried cranberries
1/2 cup raw sugar (you can also use maple or agave syrup)
3/4 cup quick oats
1 cup plant-based milk
1/4 cup melted vegan butter (optional)
2 tbsp chia seeds
2 tsp baking powder
1 ripe banana

Method

Add the oats, flour, almonds, chia seeds, sugar, baking powder and dried cranberries in a bowl and mix together. Mash your banana with a fork and add the plant-based milk and vegan butter. Add the wet ingredients with the dry and stir until well combined. Pour the mixture into the muffin pan and bake for 25 minutes at 180 degree Celsius. This recipe can make 20 mini muffins and 12 regular sized muffins.
