Brown Sugar Dry Brine Smoked Chicken Recipe - There is a BBQ place here in Toronto called Beach Hill Smokehouse; on the menu is a brown sugar rubbed smoked chicken... It is really really great. So here is our homage to their great Texas BBQ chicken recipe.

Ingredients:
1 chicken, spatchcocked
30 mL (2 Tbsp) cracked black pepper
30 mL (2 Tbsp) brown sugar
15 mL (1Tbsp) coarse salt
30 mL (2 Tbsp) neutral oil

Method:
Rub chicken with the oil, and then rub in the brown sugar mix.
Place uncovered in the fridge overnight.
Preheat the pellet smoker / grill to around 180)C (350ºF).
Cook chicken around 1½ - 2 hours depending on size, or until an instant read thermometer registers 74ºC (165ºF).

Yeah, I used to wet brine poultry and especially with turkey, it felt more waterlogged than juicy. I've dry brined steak for a while, so I felt silly when I realized that was the move for poultry also. It's absolutely fantastic.

after watching a ton of poultry bbq smoking videos, this is the first i've seen his version of spatchcock...it's pure genius. simple and logical....we've been doing it wrong our whole lives!

question: has anyone tried this with turkey and what would you adjust?

A lot of little things you do impress me. This method of spatchcocking the chicken seems ingenious. Another thing you did, that I am embarrassed to admit I never thought of, is crumpling up parchment paper. You saved me some headaches there.
