Ctrl + V for visual block
Shift + I for going to the top line
D for clearing/deleting
ESC for applying changes

Great explanation.
For me, it takes a second for the lines to update when editing a git commit message. But it works.

How to select 1 word under the cursor on the multiple lines where each line contains many words and words are different sizes?

Damn. If you're recording vim tutors maybe you should've enabled showing key presses in the video. Also my default visual block mode keystroke is Ctrl+Q. Also for some reason when exiting visual block mode with Escape, changes to all line are made, but when it's exited with Ctrl+C, only first lilne is changed. What the heck
