How to build HTML tags. HTML tags are like a sandwich, you need to sandwich the content in the opening and closing parts of the tags.

How to use HTML tag attributes.

3. em tag (Emphasis tag)
4. strong tag (Strong tag)
5. a tag (Anchor, or link tag)
6 & 7. ul & li tags (List tags)
8. hr tag (Horizontal Rule tag)
9. img tag (Image tag)
10. div (Division tag)

I just realized that you probably wave your head around, jump cut and changing expressions a lot, has to do with helping keep the viewers attention- constantly having to track information on the screen but never so much that it becomes tiring. It almost feels like a trance of attention and it makes learning form these all the more easy.
I very much appreciate the effort and energy given into these tutorials and as someone who was previously near computer illiterate but is now taking courses in basic programming via Udacity, I have a better confidence in the subject and you really fill in a lot of the gaps that I feel Udacity leaves incomplete in their teaching program.
It should be noted that a part of me thinks that is on purpose, as it requires the student to find/use multiple resources to help further their understanding of HTML, CSS and Java.
