Yep, you nailed this one. Evening out the fat cap and lightly scoring it also a good move. Now if we can only figure out a way for you to put a stamp on a piece and mail it to me. lol Excellent my friend.

Big fan of the Picanha, got nice 32 ounce Piedmontese Picanha in the freezer calling out to me 😁

CJ- You live dangerously putting your arm into that fire flare-up. Be careful, my friend.
That fat cap reminds me of my Mom using suet tied around roasts with butcher string. Not only did it add to the flavor, but it also kept the meat from shrinking. (I just realized that suet is what you make beef tallow from- duh.)
