This is awesome! This is my dream for my garden as well but i got to wait on the grass lover to get over it as well 😂. Lets see how many years its gonna take him.

Try dry canning the potato’s … not sure if you have to pressure can them … homesteading with the Zimmermann on YouTube are a great one to follow and watch - learnt lots

Her neighbors are better than mine.

My main beds are in my back yard and not visible to most neighbors, just the neighbor on either side. While I had a few things disappear but in small quantities which my son kept saying it was probably squirrels and possums which I convinced myself was true. 🎉I planted a full raised bed with potatoes and saw the plants were starting to die back and decided I would dig them out that weekend. Saturday morning I went out to nothing but bare ground with the plants strewn about. While I had been at work someone had come and dug up the entire bed. My son tried to convince me it was moles or something but you could clearly see the remaining outline of a shovel throughout the bed. Only one of my neighbors had ever been caught in my yard admiring one of my herb beds previously and from his patio he had a perfect view of my back yard beds. It would be bad if I always blamed him for stealing them and he didn't, but I always felt he had the personality of a thief. Left the beds empty after that until after he moved.
