I wish I could Andrew, but they do not sell blocks of cheese at my local grocery store in my country of residence. Only pre-grated stuff.

I worked stocking shelves at a grocery store for like 6 years and the amount of people that didn't know about these "anti-caking" agents was staggeringly high. So often people would look at the pack of shredded cheese and say it was moldy because of the powdery surface.

I only buy shredded mozzarella because in the UK it's hard to get low moisture mozzarella (we refer to it as grated, but shredded sounds way cooler)

ofc if you're willing to sacrifice final quality for convenience, use grated cheese. but when quality matters or the starch would ruin the recipe, don't cut corners

The anticaking stuff (usually a starch like potato) is not on my big list of ingredients to avoid. The fungicide is (natamycin). Not needed!

Should’ve used all one cheese for the pre shredded, the blend of 2 cheeses is always going to look like that

I will splurge for block cheese when I have money where I live shredded is cheaper so that's what I buy. Can be picky about flavor when companies don't want to pay you a living wage.

NGL minus the oil the pre shredded looks way better. Looks gooey and stringy. The block cheddar looks like it was cooked in a microwave.

Well I mean if you're melting the cheese on your nachos do you really want it all to be one giant mass of cheese? Pre-shredded wouldn't stick all together.
