Thermocouples are a common temperature sensor, constructed out of two dissimilar metals they create a small voltage proportional to temperature gradient . A thermocouple can be used to make a relative measurement and needs to be used with a reference junction to make a absolute measurement.

How does the instrument know the temperature? Does it have a third sensor?
How to extend the wires to the sensor? Is it just to extend with a good copper wire?

Why I'm having issues to stabilize my temperature within the 60 minutes time to stabilize? it just gets to 25 sometime 15 minutes left and ir goes back to 60 minutes remaining, ant it never works after several Hurs of waiting.
