This is egg fried rice of Italy. Exactly the same concept of taking leftover fridge cold rice and turning it into something better than the original dish.

pro tip from an Italian: you can also mix it up while it cooks and add a bit of parmigiano in the end and it's amazing, better than the original risotto lol

Italian here, leftover risotto is exclusively eaten 1) warmed in the oven 2) used for arancini (sicilian street food)

Risotto you can cool after cooking and just reheat it with a bit of stock or cream and its the same as fresh.

The trick is spreading it out on a sheet tray and scoring it to prevent overcooking
