Growing up Greek has to be one of the most obnoxious/beautiful human experiences. I can’t quite explain it but I feel like this video does a pretty good job of drawing a decent picture. A little over the top, a little unnecessary and incredibly delicious. Sundays are for gathering with the family. This Souvlaki Rotisserie is the perfect small appliance if you’re looking to throw the best Greek party ever!
INGREDIENTS:
1x large red onion
1x red pepper
1x orange pepper
1x yellow pepper
1x green pepper
6x chicken breasts
Marinade:
2 1/2 tsp salt
3/4 tsp pepper
5 garlic cloves, pressed
1 1/2 tbsp dried oregano
1 lemon juiced
1 ½ tbsp mustard
3/4 cup plain Greek yogurt
3 tbsp olive oil
INSTRUCTIONS:
Make the marinade by whisking together the ingredients in a small bowl.
Cut the chicken breasts into 1-2 inch pieces and add to a large bowl. Drizzle the marinade over the chicken, toss it, and let it sit for 30 minutes while you prep the vegetables.
Cut the vegetables into similar-sized pieces as the chicken.
Divide the chicken and vegetable pieces evenly among the skewers (5-6).
Place in the vertical rotisserie on slow/low for 30-60 minutes. Cook until the temperature of the chicken reaches 165F.
