The dish likely originated as a basic meal of rice and lentils cooked together, making it highly nutritious and easily digestible. Historically, khichdi has been a staple for people of all classes, from kings to commoners, and has often been used for its soothing properties, especially during illness or fasting periods.

1. Bengal:

Bhog Khichuri: Made with roasted moong dal and ghee, it’s often offered as a prasad (offering) during Durga Puja.



2. Gujarat:

Masala Khichdi: A spicier version, often cooked with turmeric, cumin, and vegetables. It’s paired with buttermilk or pickle.



3. Maharashtra:

Varyache Tandul Khichdi: Made during fasting, this version uses barnyard millet (vari rice) instead of regular rice.



4. Rajasthan:

Bajra Khichdi: Made with pearl millet (bajra) and moong dal, it’s a hearty and wholesome version suited for the dry climate.



5. South India:

Pongal (Tamil Nadu): A similar dish where rice and moong dal are cooked together and seasoned with black pepper, cumin, and ghee.



6. Uttar Pradesh:

Tehri Khichdi: A more elaborate version cooked with spices, vegetables, and sometimes yogurt, often eaten during winters.



7. Bihar:

Bihari Khichdi: Made with rice, moong dal, and vegetables, it's served with ghee, papad, and pickles, especially on Makar Sankranti.

Dal Khichdi’s versatility and simplicity make it a dish with countless regional variations, each adding local spices, grains, or vegetables, adapting to the taste and needs of the people in different states of India. It has evolved from a humble meal into a beloved dish cherished across the country.

It is called as khichidi in India. We south people call it as Pongal. Very healthy.

I think a massive part of healthy eating is also eating local produce. Yes, ofc we can order superfoods from all over the world, but still the most sustainable thing to do is to look for healthy food that grows in our region.
