THE THINGS YOU'LL NEED:

Vanilla Rainbow Cookies:
2 cups all purpose flour
¼ teaspoon salt
10 tablespoons butter, room temperature
¾ cup granulated sugar
1 ½ teaspoon vanilla extract
1 egg, room temperature
Suncore “Super Color Powder”: red, orange, yellow, green, blue, purple

Rainbow Cake Balls (Truffles):
Vanilla Cake
· 1 stick (4 ounces) unsalted butter, room temperature
· 1 cup sugar
· 3 eggs whites
· 2 teaspoons vanilla extract
· ¼ teaspoons almond extract
· 1 ½ cups all purpose flour
· 1 ½ teaspoons baking powder
· ½ teaspoon salt
· ½ cup whole milk, room temperature
Decoration
· 1 cup American buttercream
· 2 cups white candy melts
· Suncore “Super color Powder”: red, orange, yellow, green, blue, purple
· Naturally colored rainbow sprinkles

Rainbow Fruit Popsicles:
Red Layer
½ of a banana
¼ cup vanilla Greek yogurt
½ cup frozen raspberries
Water to thin out

Orange Layer
½ of a banana
¼ cup vanilla Greek yogurt
½ cup frozen peaches
½ teaspoon orange powder
Water to thin out

Yellow Layer
½ of a banana
¼ cup vanilla Greek yogurt
½ cup frozen pineapple
½ teaspoon yellow powder
Water to thin out

Green Layer
½ of a banana
¼ cup vanilla Greek yogurt
½ cup frozen mango
Handful of spinach
Water to thin out

Blue Layer
½ of a banana
¼ cup vanilla Greek yogurt
½ cup frozen pineapple
¼ teaspoon blue powder
Water to thin out

Purple Layer
½ of a banana
¼ cup vanilla Greek yogurt
½ cup frozen mixed berries
Water to thin out

Rainbow Veggie Pizza
1 Pre-made pizza dough
1 Jar of pizza sauce
1 bag shredded mozzarella
1-pint cherry tomatoes, sliced
1 orange bell pepper, chopped
1 ear of corn, cut off the cob
1 head of broccoli, chopped
1 red onion, chopped
Flour for dusting

I hardly ever comment but seeing you use natural dyes makes me so happy. I'm allergic to red dye and don't like to use artificial dyes at all when I'm baking. I'm excited to try those powders

The rainbow slice cookies are so cute! Also those natural powder colourings are wonderful. I love rainbow snacks but because they tend to use artificial dyes, I don't like eating them. The natural colourings will be a game changer omg.

I just have to say, after so many years of watching you, and growing into the person I am today, I'm happy to see these differences that you are doing! That cake truffle recipe you use sounds exactly like the recipe I used for all the cakes I made for my kids. It’s the almond extract, once I discovered how yummy that tastes, it was my go to recipe for cakes. And everyone loves it. Tastes like old fashioned Italian Rainbow cookies.
