I think the openness of the desert adds to the horror aspect rather than subtracting from it. The fact that the audience and the characters can see out for miles, but still can’t see the Graboids, makes the whole thing more suspenseful and gives them more trouble. Because, even though you can see everything around you, because you can’t see under you, they could still be anywhere.

Different scenarios to describe something 'scary':
Let's say a monster is chasing after you.
Terror is when you realize there's a monster chasing after you.
Thrill is when you're running away from the monster as it chases you.
Fear is when you haven't seen the monster for a while and you know it's out there looking for you.
Horror is when you get cornered in a dead end while running away as the monster slowly approaches to finish you off.
