I used to go to the one on Fullerton pretty often and the Carnitas Tacos were always cheap and amazing. Really miss living on the Northwest Side in Chicago but the cost of living will keep me from moving back.

Put a scrambled egg or two on top of the chorizo and you have a breakfast!
If you want to make your own chorizo at home, start with a pound of ground beef or ground pork (on the fatty side 73/27%, the fattier the more flavor). Add cumin and black pepper (treat cumin like you do black pepper...if you add a lot of pepper, you add a lot of cumin) and garlic salt (all spices are to taste, it it's not salty enough or not spicy enough, remember and add more the next time...make it your own) Add a quarter cup red chili powder and a quarter cup white vinegar. Put on some food safe plastic gloves and mix the ingredients until well mixed. Now you just fry it. For breakfast, pull off a chunk about the size of a meatball and start frying it (with a little bit of oil). When it's half way done throw in two scrambled eggs and finish. You can heat up a couple of flour tortillas and make two breakfast burritos or you can heat up some corn tortillas and make some eggs & chorizo tacos. The red chili powder and vinegar are preservatives so if you cover it well, it should last you 7 to 10 days. Put it in a repurposed cottage cheese container or designate a tupperware container for chorizo because the red chili powder will stain it.
Try it with potatoes (Papas con chorizo). Use a meatball size chunk of chorizo per potato. Dice the potatoes and start frying them in a couple of teaspoons of oil (you are only going to fry the outsides for taste). Once they are browned a bit, add half a cup of water, add garlic salt and black pepper, cover and lower to a simmer (you are going to steam the potatoes until done) keep adding a little water so it doesn't dry out. When the potatoes are done, make a well in the middle and add a little oil and drop in the chorizo (turn up the heat to start frying the chorizo). When the chorizo is almost done, start mixing the potatoes and chorizo together until done. Heat up the flour tortillas and make burritos. If you want to kick it up a notch, add onions when you first start frying the potatoes.

Naw. They use to be good. But fell off. Check out the Ashland location close to ( Ashland n Julian ) 👍🏼That Guanajuato is on point
