This reminds me of the cowboy cassanova breakfast hash from your book! I really use your book a lot even though I'm not vegan. I find that a lot of vegan recipes are way more creative with getting good flavors into the food 👌 but I have to admit, I sometimes substitute some non-vegan ingredients, like eggs in the sunshine scramble (also from the book) 😅 Would love a video on the breakfast hash one and the salsa that goes with it as well 👌😁
