AIR Pie & TikTok Egg Yolk Pinching

Lovely viewer Nicola shared the story of air pie with me. It comes from the Lancashire region of England and was made by Nicola's gran when she couldn't afford fish for Fridays, a day many Catholics abstain from eating meat. So let's make gran proud and make us an air pie! 😇 And we'll test out that egg-yolk-pinching thing while we're at it. 😆 Finally, thank you to Lee for kindly sending me the Henderson's Relish. 😙

When I read air pie in the title, it kinda reminded me of the story about stone soup, where like the people in the village put stone in a pot and made soup out of it. It is a weird connection and idk why my brain connected the two

We've made a version of this from my Mother's Welsh grandmother- it uses Leeks instead of onions.

Henderson's Relish is considered vegetarian Worcestershire sauce since it doesn't contain anchovies.

Hendo's!!!! When I saw Henderson's Relish I almost squealed and had to get up to leave a comment. We Sheffielders are extremely passionate about our Hendo's, which can be used in placed of Worcestershire Sauce but is a) easier to pronounce and b) tastes better than Lea and Perrins, the prevalent Worcestershire sauce brand in the UK. I actually live abroad now and it's one of the few things I just have to bring back with me when I visit home! You just have to have it in your kitchen.


For over a hundred years it was made in a small, slighty-ramshackle Victorian brick factory next to the University of Sheffield (a woodcut of the factory is printed on the label of the larger bottles). Their business grew so much in recent years they had to upgrade to a larger factory but there's a lot of fond feeling for that old building. It's so exciting to see Henderson's Relish appear on something non-local! It's difficult to find even in other parts of the UK, although I believe certain supermarkets do carry it alongside Lea and Perrins now.

Put a few shakes in rich onion gravy and pour it over your chips (thick cut fries) and you'll be having a true Sheffield experience!

Growing up when we didn’t like what my mom was cooking she said she could make us an air sandwich which was basically we ate nothing lol

Any time I asked my mom what was for dinner, she would say "Bat Wing Soup" & "Giraffe Snot on Toast". I don't know about giraffe snot, but the bat wing soup comment didn't seem to age particularly well

My mum says "fresh air pie and a walk round ", I didn't know it was an actual recipe! I had no idea it varied throughout the uk (where I'm from) or that it wasn't a universal response to hungry children either! Great video as alwys Emmy!

As a Jamaican (colonized by the Brits), we say "air pie & breeze pudding" 🤣

My grandma was from Lancashire. Sadly she passed way before I was born, but my mother makes the regional recipes, including this pie!! I recommend Eccles Cakes and a very traditional Beef Hotpot (think Shepherd’s Pie, but with sliced potato on top instead of mashed potato). Northern English food is super rich and filling, recommend it to all!

Oh my gosh you have Hendersons relish?!?! My father's family are from Sheffield and they always bring it down south for us as the shops only seem to stock it up north! Love this!
