MACADAMIA AND CASHEW TRUFFLE KARE KARE TRADITIONAL COOKING

RECIPE:
1.5kg Ox tail
850g Beef Ribs
800g Tripe
5-6pcs Bay leaf
3pcs Onion
1Bulb Garlic
To taste Salt and pepper
*Simmmer all together for 90mins, or until the meat is tender. This method can produced wonderful beef stock.

1/4c Malagkit na bigas
100g Cashew nuts
130g Macadamia nuts
*Toast All together, and blend it until it's powder texture

1/2c Olive oil
25g achuete seeds

100g Shrimp paste
3pcs Eggplant
100g French bean
150g Petchay
1bulb of garlic

TIPS:
*Use the beef stock to make the kare kare sauce.
*Toast the bigas na malagkit, cashew, and macadamia to have an extra flavor to the sauce.
*Blanch the vegetables to have that bright green effect.
*First boil or unang kulo to ensures that the meat is very clean. And to remove the scum from the stock.
*Peanut butter can be used as a substitute instead of the ground peanuts.
