You can also can the tallow in mason jars. Since it's sterile from the canning process, and has limited oxygen, it's shelf stable and will keep for over a year.

if you were to grind that fat prior to rendering youd get about 30% more tallow. i do this once or twice a month using fat from a brisket. used to get about 4 cups of tallow, now i get about 6 cups after grinding it prior to render.

I freeze tallow, schmaltz, lard, and bacon fat in ice cube trays, then pop them into a zipper bag and back in the freezer. Perfect serving cubes of delicious fat. (This works great for tomato paste, chipotles in adobo, and other things where you often only use a bit at a time.)

It is always a good idea to reboil the tallow before putting it in the fridge.
Extra moisture ruins the tallow.

In our area, jars of tallow are so expensive that it was an impractical luxury oil for us.
We now purchase grass fed & finished ground suet from our local high end butcher.

Our method is to render a few pounds overnight in our slow cooker/crock pot on its “low” setting.
Wake up the next morning to golden delicious tallow after straining through cheesecloth.

Adding the water is the key… It works for Duckfat as well as chicken or turkey or game hens. And I have had duck fat or poultry fat last in the freezer for a year with no effect whatsoever.

I wish I had all the tools at his disposal. A great chef!

Slow cooker works great!! I render 2 or 3 times to clean it completely. It takes the smell away and makes it more neutral.

If you have a smoker you can make smoked tallow. It’s amazing for adding a slight Smokey flavor to anything you want. Put a little bit on a steak while resting, cook your burgers with it, etc.

here in the Philippines that pieces of meat after rendering the fat isnt going to waste, there is a street food here that is literally fried beef fat.

Works great in a crockpot. Another tip id give is try to get as much of the meat off the fat, gives a strong smell and seems to turn quicker. I work for a BBQ place and I take home the brisket trimmings and make my own.
