RECIPE: Crostini with Balsamic Strawberries and Ricotta

These crostini are light, fresh, and bursting with flavor—just the thing for celebrating someone special.
Ingredients:
- ½ cup strawberries – chopped
- ¼ cup balsamic vinegar
- 1 tsp. lemon zest
- 2 tsp. brown sugar
- 5 tbsp. ricotta
- ½ baguette
Instructions:
1. Slice the baguette into twelve ½-inch pieces.
2. Toast the slices in a 350°F oven for about 5 minutes, or until they’re golden and crisp.
3. While the crostini are toasting, finely dice the strawberries until you have ½ cup.
4. In a small saucepan, combine 4 tablespoons of balsamic vinegar with 2 teaspoons of brown sugar.Simmer over medium heat, stirring occasionally, for 6–8 minutes, until the reduction thickens to a syrup-like consistency.
5. While the sauce is reducing, prepare 1 teaspoon of lemon zest.
6. Combine the strawberries and lemon zest in a small bowl.
7. Add the balsamic reduction to the strawberry mixture and stir gently to combine.
8. Spread a layer of ricotta onto each toasted baguette slice.
9. Top with a spoonful of the balsamic strawberry mixture. Serve immediately and enjoy.
