I love her. I haven't completed the game, so please, no one spoil anything, but I wonder if Hellen is a complex character. At 1:33, she seems to show concern for Mario and Peach, even though she was fully instrumental and alongside King Boo in locking them up. We know King Boo is thoroughly evil, but maybe Hellen is not? Maybe there are limits to how far she'll go? Or maybe I interpreted this part of the cutscene wrong.
