These red velvet pancakes are the perfect sweet treat for Valentine’s Day (or any day you want to feel extra special)! Soft, fluffy, and layered with a cream cheese glaze, they’re everything you want in a breakfast. Ready to make your morning unforgettable? Let’s do this!
Recipe:
Pancake Batter:
• 1 ½ cups all-purpose flour
• 2 tbsp unsweetened cocoa powder
• 2 tsp baking powder
• ½ tsp baking soda
• ¼ tsp salt
• 3 tbsp granulated sugar
• 1 large egg
• 1 cup buttermilk
• ¼ cup whole milk
• 2 tbsp melted butter (extra for greasing)
• 1 tsp vanilla extract
• ½ tbsp red food coloring
For the Cream Cheese Glaze:
• 4 oz cream cheese
• 3 tbsp butter (softened)
• 1 cup powdered sugar
• 3 tbsp milk
• ½ tsp vanilla extract
Instructions:
1. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, and sugar.
2. In a separate bowl, whisk together buttermilk, whole milk, egg, melted butter, vanilla extract, and red food coloring.
3. Gently fold the wet ingredients into the dry ingredients. Don’t overmix—lumps are okay! Let it rest for 10 minutes.
4. For the glaze: Beat cream cheese and butter together until fluffy, then add powdered sugar, milk, and vanilla extract and mix until smooth. Set aside.
5. Heat a griddle or skillet over medium heat, greasing with butter. Pour about ¼ cup of batter onto the griddle for each pancake. Cook until bubbles form, flip, and cook the other side until golden brown.
6. Stack pancakes and spread the glaze between each one. Drizzle more glaze on top and garnish with powdered sugar, fresh berries, or heart-shaped sprinkles!
