Recipe:
1 Pound Ground Beef
1 Cup Bacon Crumbles
1/2 Cup Pork Rind Crumbs
1/2 Cup Shredded Cheese
1 Egg (use 3 eggs if doubling the recipe)
To Taste: Salt, Garlic Powder, Onion Powder, White Pepper

Cook in the air fryer or oven at 400F until internal temperature of ~155F.

1 lb ground beef
1 cup bacon crumbles
½ cup shredded cheese (or more)
½ cup pork panko
1 whole egg
Pepper, garlic pwdr, onion pwdr & just a bit of salt

Freeze then airfry @ 350 for 10mins to 155° internal

Excellent recipe! I just made 2 pounds of these. Use 1 pound Hamburger and 1 pound mild Italian Sausage and mixed them.

I have to tell you Laura, these meatballs are life changing! I also made one with the same ingredients but used ground chicken and Ground Parmesan cheese and they are all delicious. I love the quick meatball idea because I’m single and live alone and when I’m hungry I can pop two or three of these in the instant pot vortex and have a delicious meal or snack in 5 mins. I want more recipes like this!

Made these today, tripled the recipe and got 108 meatball. They were really great. Thank you for sharing this recipe. I did what you suggested and froze them first and then put them in the airfryer at 400 degrees right out of the freezer for 10 minutes. crunch on the outside and soft on the inside. Delicious!! Thanks again. I'm proud of you both. You and hubby are an inspiration to my wife and I. Many blessings to you both and the family too.

Laura, I made these for a Super Bowl party, and they were a hit! I did a test run the day before, but cooked them too long so they were dry. For the successful batch, I added melted butter and left the bacon a little limp to get more fat in for insurance, and of course, cooked them less. I warmed them up for 20 minutes at half time. Yum!

I make these all the time! I also add 1/4 cup heavy cream to make the meatballs a little softer. Thanks for the recipe!

I’m addicted to these. I just made another batch. This time I use sliced Havarti cheese and cheddar cheese, and chopped it up in fine pieces. I used a little over half a cup and did the recipe according to how Laura did her meatballs and I must tell you they are delicious. I don’t like garlic, but I did use onion powder and it made such a difference in the taste. These are definitely on repeat.

Pre-shredded has plants in it... this one specifically has potato starch. Shredding your own cheese takes a little more time, but keeps out the unwanted sugars.

Appears to be much better than using raw bacon, this updated recipe looks great and one per post is another good idea.
I saw a freezer for my garage on the last trip to Costco and plan on buying one. Praying that your husband is healing well after his surgery.
