Ingredients

• 800g (1.75 lbs) cherry tomatoes
• 4 cloves garlic, peeled
• 1 shallot, halved
• 1 tbsp balsamic vinegar (to drizzle over shallots)
• Olive oil
• 1 tsp dried basil
• salt (adjust to taste)
• 300g (10.5 oz) pasta (pipe or your choice)
• 150g (5.3 oz) Crema di Pecorino Romano or 100g. (3.5 oz) Heavy cream (for the sauce)
• 5 leaves fresh basil, finely chopped
• 1/2 tsp crushed chili flakes (adjust to spice preference)
• 100g (3.5 oz) mozzarella pearls (for garnish)
• Additional Parmesan cheese for serving

Instructions

1. Prepare the Roasted Tomato Base

1. Preheat your oven to 200°C (400°F).
2. Arrange the cherry tomatoes, garlic cloves, and halved shallot on a baking tray.
3. Drizzle all with olive oil and drizzle the shallots with balsamic vinegar and sprinkle everything with dried basil and salt. Toss gently to coat.
4. Roast in the oven for 20-25 minutes, or until the tomatoes are soft and slightly caramelized.

2. Create the Sauce

1. Once roasted, let the tomatoes cool slightly, then remove as much of the tomato skins as possible for a smoother sauce (optional but recommended).
2. Transfer the roasted mixture to a blender or food processor. Add a couple of splashes (around 1/4 cup) of reserved pasta water to help blend into a smooth sauce.
3. Pour the sauce into a large skillet or saucepan. Simmer over low heat for 5 minutes.

3. Enrich the Flavor

1. Stir in Crema di Pecorino Romano or Heavy cream until fully melted and incorporated into the sauce.
2. Add the fresh basil and crushed chili flakes. Stir gently to combine.

4. Cook the Pasta

1. While the sauce is simmering, cook the pasta in salted boiling water according to package instructions until al dente. Reserve some pasta water before draining.
2. Add the cooked pasta directly to the sauce, tossing to coat evenly. If needed, add a bit more pasta water for a creamier consistency.

5. Assemble and Serve

1. Plate the pasta and garnish with mozzarella pearls.
2. Top with freshly grated Parmesan cheese.
3. Serve immediately with a sprinkle of additional chili flakes or fresh basil, if desired.
4. If the sauce tastes a bit sour, you can add some sugar to balance out the acidity.
