I believe one of the reasons is because the popularity of FNAF made children, who are easily convinced, scared of the animatronics. As well as that, the decline of animatronics in general has gone way up because there are now higher tech entertainment sources.

Fun fact: He didn't order specifically a coyote costume and get a rat costume by mistake. Instead what happened was that he saw what he thought was a coyote costume and ordered it but when it arrived, he saw it had a rat tail which changed the name from Coyote Pizza to Rick Rats Pizza, which later turned into Chuck E Cheese's Pizza Time Theatre

it was actually a mascot costume they had bought without realizing it was a rat, not cosmetics for their animatronic. also, they actually made pizza because it was "easy to not screw up" according to them :]
