Actually if you pause it a little better. You can see it did destroy a big chunk of the bridge but it did not destroy the entire bridge. She was able to run to the left and run on top of the bridge rim. It was crumbled but it was not fully destroyed. She was able to cross safely before that little Nick broke off and destroyed the rest of the bridge

In incredibles two, when elastigirl is chasing the train, the part just before she launches on the ttain you can alrrady see the train going past. But then when she launches she manages to get to it, the speed of the train meant she missed it.
