If all data are stored in a binary number system, how do the compiler and the operating system know the difference between numbers, images, and characters?

So, Does the numbers convert automatically to character without need ?

Too simplified. You didn't mention how utf-8 encodes codepoints larger than one byte. Sometimes it matters, for instance you can't just reverse an array of utf-8 bytes and have reversed text.
