Sourdough - Pineapple Upside Down Cake
10 canned/fresh pineapple rings, cut two of them in half
12 stemmed maraschino cherries
180 grams brown sugar
180 grams pineapple juice
55 grams butter, cut into slices
230 grams all-purpose flour
230 grams granulated sugar
1 tsp baking powder
1/2 tsp salt
230 grams 100% hydration sourdough starter
4 large eggs
115 grams melted butter
1.5 tsp vanilla extract
Preheat oven to 350°F/180°C. Grease an 11x13 inch/28x33 cm baking pan with butter. Arrange pineapple rings in prepared pan. Place a cherry in each pineapple center.
Bring brown sugar and pineapple juice to a boil in a medium sauce pan over medium heat. Reduce heat to low; simmer mixture until it reaches 230°F/110°C (soft ball stage), about 13-15 minutes. Stir in butter until melted and incorporated. Pour caramel over pineapple rings. Set aside.
In a medium bowl, stir together flour, sugar, baking powder and salt. In a large bowl, whisk together starter, eggs, melted butter and vanilla extract until combined and smooth.
Add dry mixture to wet mixture. Whisk until thoroughly mixed. Pour batter over pineapple rings. Smooth top with spatula. Bake for about 45-55 minutes or until done.
Remove cake from oven; cool for 30 minutes. Place a serving plate/cutting board over pan. Carefully invert cake.

12 buah cherry merah
180 gram brown sugar
180 gram air perasan nanas
55 gram mentega, iris tipis
230 gram terigu protein sedang
230 gram gula pasir
1 sdt baking powder
1/2 sdt garam
230 gram 100% hydration sourdough starter
4 butir telur
115 gram mentega cair
1.5 sdt vanilla extract
Panaskan oven suhu 180°C. Olesi loyang ukuran 28x33 cm dengan mentega. Tata irisan nanas di loyang dan taruh cherry di tengahnya.
Didihkan brown sugar dan air nanas dengan api sedang. Kecilkan api; lanjutkan masak sampai sirup mencapai suhu 110°C (tahap soft ball). Tambakan mentega. Aduk sampai mentega leleh dan tercampur merata. Tuangkan ke atas nanas. Sisihkan.
Di wadah sedang, aduk rata terigu, gula pasir, baking powder dan garam. Di wadah yang lebih besar, aduk rata starter, telur, mentega cair dan vanilla extract dengan whisk.
Masukkan bahan kering ke dalam bahan basah. Aduk dengan whisk sampai mulus. Tuangkan adonan ke atas nanas. Panggang sekitar 45-55 menit atau sampai matang.
Pindahkan cake ke rak pendingin. Dinginkan selama 30 menit. Taruh piring saji atau talenan di atas loyang. Balik cake dengan hati-hati.
