Lindy’s Pumpkin sausage soup
1 can or a pie size pumpkin roasted and puréed
1 cup heavy cream
3-4 cups bone broth
2 rolls of breakfast sausage
1TBS freeze dried onions
1 tsp nutmeg
1 tsp cumin
1 tsp garlic
1-2 tsp pink salt
1 tsp pepper
1 cup sour cream
1-2 big handfuls of fresh spinach

Cook sausage and set aside. Combine 1/2 of broth, heavy cream and spices and let simmer. Stir until creamy. Add the sour cream and combine until incorporated. Add sausage in and simmer a few minutes. A few minutes before serving throw in the spinach and let it wilt. Combine and add more broth if needed.
Serve with goat cheese on top.
