Brant Pitre (excellent, very excellent Catholic Scholar) has a 122 page chapter in his book - Jesus and the Last Supper, 2015 - on this topic. He goes through the questions involved in great detail, examining the date of the Last Supper from every angle. He concludes that there is no conflict between the accounts in the four Gospels concerning the day of the Last Supper.
