The miller's outfit is good enough, the other stealth gear might have a little less noise and visibility, but not much. Your stealth skill matters more than those few points; if your stealth is high enough you can still sneak in plate armor.

dont forget a black coif, you can wear both a hat and a coif.

I found that the only good pickpocket pieces are hat and hood, for body slot you can find a beutifull black craftan that looks amazing has very good stealth stats and counts as a gambeson if you want to add some armor. I found it on cuman loot but couldnt point out where or whom.
