I think what Laurie felt for Joe was more like admiration and respect as she was an ambitious girl and a sense of comfort as he could be his immature and childish self with her with no need to grow up which made it platonic and never seemed to be romantic but with Amy it felt completely different as it showed affection, longing and yearning, and she steered up new emotions in him like jealousy and the need to mature up to a full grow man who would be worthy of her, capable to give her love and be her sanctuary

I think people hate their romance on the basis that he just "settled" for Amy because Jo rejected him, but I think that's a very juvenile mindset. Rarely, in life, are you your partner's first love. When you fall for someone, chances are they were once over the moon for someone else, and it's something we try to forget to spare our egos. Amy knows Laurie loved Jo once, but she knows the love he feels for her is their own and it's genuine, and the fact that he loved someone else doesn't make her feel lesser (by the end, anyways).

Timothee was a wonderful Laurie. I’ll never get over Laurie and Jo not ending up together, no matter how many versions I see. I read somewhere that this story was published in parts and though people, especially women so wanted them to be together, the author staunchly refused.

It's sad that they portrayed it like Amy was always second and envious when she actually was not. Jo and Amy had a lot of conflict but that was because Jo was really boyish and Amy was girly.
