This is very similar to a dish we have here in Bangladesh 🇧🇩. Its called begun bhorta or mashed eggplant. The procedure to make it is almost exactly how Chef Dev made it here, at least in my family as theres no strict rule on what you can add to your begun bhorta. Some people I know add a bit of pickled mango into it.
I get that Guyanese food has a lot of South Asian influence, but I never expected the similarities to be this similar honestly.
