I think a really fun dynamic could be a Ganondorf who really isn't evil, but he sets up fun little harmless dungeons for the child that keeps trying to kill him

He isn’t evil, but he does understand that a link needs to be doing something or else he’ll start doing some goblin shenanigans. So he just gave link some dungeons to run around in to keep him busy.

Ngl, it would be cool if, after shaking off the curse of Demise, Ganondorf got a hobby in dungeon building and regularly challenges the current incarnation of Link to clear them for old-times sake.

Imagine if Ganondorf was Links adopted father who makes lil 'dungeons' out of card board for link and his friend Zelda play in. Zelda doesn't really like rough housing so she's a princess that likes to read. Link just likes to be with his friend and be an adventurer.
