I'm returning to say, this does seem to work. My batch of store-bought strawberries (non-organic, just regular pesticide-juice kind) went through slightly over a week in the fridge, an 11-hour power outage, a second power outage of a few hours, and I'm saving the last two strawberries for tomorrow morning before buying more. This is the second batch I've done the vinegar treatment on and thus far have been VERY happy—both times the strawberries appear brand new even after a week. Really cool, thank you!

Hi! My jars get a ton of condensation in them when I put them in the fridge. Should I be concerned about that? I let all of the fruit dry for a really long time (overnight) and I live in a Dry climate. I don’t know where the moisture is coming from inside the jar than the fruit.

Does it have to be a jar? Can it be sealed Tupperware?

So, I’m trying this today. Got my strawberries and followed your directions. It’s sitting on my table on paper towels instead of a towel. Hopefully that won’t make much difference. I’m anxious to see how they turn out after a week or 2. I candy fruit and having to buy new strawberries because the other ones get soft spots FAST are annoying and a big waste.

Will this work for Strawberries gotten from the side of the road farmers? When they are really ripe? Should I go through the strawberries and make sure none have even slightly bruiseed skins or nicks? Do we need to fill the jar? I'm trying to figure out how large a jar to buy.

It seems like rinsing right after soaking in the very diluted vinegar would rinse all the vinegar right off.
How is it that only 2 minutes exposure to very diluted vinegar helps? What does it do? Thanks!
