These look about right for what I want in my 4wd for 12v fridge, accessories canopy lights etc, low draw devices (about 15 amps - 20amps max) but big density is good.

I would probably stack them with vsb tape, maybe two layers, to give a little gap between the cells and allow some heat to dissipate.

Double wires only increase rating by about 50%, however your resistance is increased, recommend one appropriate welding cable.
