Keto Chocolate Crunch Bar - Krackel / Rice Crispy Fat Bomb

preview_player
Показать описание
This recipe uses protein puffs to mimic the texture of crispy rice to create a keto version of a Hershey's Krackel or Nestle Crunch bar. This recipe is mildly "dirty" keto due to tapioca in the protein puffs (which contributes 2g of the 4g net carbs per bar).

I know someone will ask, can you substitute cacao butter for the coconut oil -- the answer is "yes". Use 1 oz of cacao butter, but be prepared for a VERY intense chocolate flavor. If you do this, you will probably want to dial back on the cocoa powder.

To anyone wondering about using pork rinds

Made a few versions of these:
1. German chocolate-chopped pecans and shredded coconut instead of the crunch things and used unrefined coconut oil (the kind that tastes like coconut) and coconut butter instead of almond butter
2. Mr Goodbar-substituted chopped peanuts instead of crunchy things
3. Frugal alternative Krackle-pork rinds chopped into pieces, some were about twice as big as actual rice crispies
4. Used Nutzo in place of almond butter and didn't put in any add in. The seeds in the nutzo give a nice little crunch

First batch was good but needed a touch more sweetener so in the next batches I used 3T powdered sweetener.

Pork rinds version was my absolute favorite. (Considering that I like Mr. Goodbar better than Krackle, that's saying something) I chopped the pork rinds into approximately rice crispy size pieces. I put 7g of this in each of 2 regular candybar molds and divided the chocolate evenly between the 2.

For anyone who prefers not to use measuring cups
43 g butter
41 g coconut oil
48 g almond butter
10 g cocoa powder
16 g powdered sweetener as written (I use 24 g)
1/8 tsp vanilla (this one is such a small amount that it's best measured by volume)

GREAT RECIPE! I'm in chocolate heaven. Going to also try with cocoa butter so it can be kept at room temp without melting.

I just watched this and thought “almond bar”... going to try this crunchy recipe AND a plain bar with almonds. Just ordered the molds! Thanks for the inspiration, Steve!

I can't believe I ran across this video! Just this week I wandered into forbidden territory - the cereal aisle - investigating carbs in rice krispies to see if I could make something like this. Alas, the carbs were sky-high, so I shuffled away, sadly. Thanks a million! This will help with my "crunchy" craving so much!

I just got around to making these and it did NOT disappoint! I rarely have a sweet tooth these days, but man, when it comes on, it comes on with a vengeance! I used my little silicon cupcake liners and made little circles of these and I added some sea salt to the tops. Delicious!!

I made these....again today. 🙂 Instead of the coconut oil, I substituted a combo of coconut butter and cocoa butter, added 1T. of Swerve, and 1T. of cocoa. And....I substituted almond butter for cashew butter. Holy check its delish. I also use a 8-bar mold (for a smaller bar since my version is so rich). I love these candy bar recipes, they make my family feel like we dominate the world. Atleast dietarily.😉 Thanks Steve!

Tip for anyone that has bars and most keto recipes that crumble / fall apart, to make it gooey, and stronger bond, try adding 1 to 2 teaspoons of non flavored beef gelatin to the recipe. I didn't even have to chill mine, , they stayed together even at room temp and prefer the thickened texture. If you're new to using it, non-flavored beef gelatin is very low carb / mostly protein makes it great for Keto recipes, and it not only thickens, but makes things sticky and gooey.. Another side benefit, is if you lost weight on Keto, it's said to be helpful with keeping skin healthy and reduce loose skin after weight loss too.

Another believer. I jazzed mine up on the 2nd batch: DOUBLED ALL INGREDIENTS TO COMPLETELY FILL SILICONE RESERVOIRS, used Kerrygold grassfed butter, 1 scoop Protein Puffs AND 1 scoop raw slivered almonds from the Sprouts bulk area, organic smooth almond butter, granulated Erythritol, Kirkland organic unrefined coconut oil, and half Hershey’s cocoa powder and half Viva organic unsweetened cacao powder. Used a dinner fork to mix each reservoir’s contents rather than a small spatula. FROZE them rather than refrigerated them so they won’t melt at room temperature so fast.

Hello! I’d like to say THANK YOU for the recipe! I made some today on smaller rectangular silicone trays. But, instead of the puffs, I made them with nuts, three with pecans, three with slice almonds, and three with walnuts! Also, I added one more tbsp of confectioners because I have a sweet tooth! Next time, I’ll make them with bacon bits, and maybe some jalapeños in others! My possibilities are endless with this recipe and method! HUGE THANK YOU!! (Note, through your Amazon link, I ordered Black Dutch Cocoa Powder and other household needs. I’ll be making some “oreo” sandwiches!! Down 61 lbs. with keto!

Just bought the puffs and will make in my bite size molds to satisfy my choc crave but keeping them small enough so I don't overdo it! Thanks for another fab recipe!! 🤤

Made these yesterday using a Wilton Bite-Size Brownie Squares Silicone Mold, 24-Cavity) I already had. They turned out great. Took a couple with me today while kayaking. A good healthy pick me up while on the water. I’m most likely going to buy the mold Steve used for the deeper cavity to help hold everything together better. Wanted to try my hand at the recipe first before committing to another mold. Great job Steve; love your videos/recipes.

Made these today. Seriously, I haven’t really cared for any other Keto candy, but these bars are great!

Holy wow! I just made these and they are awesome. Had to use the chocolate puffs as the others were out stock. My almond butter was the crunchy kind and it added the right salt to all the sweet. Thanks for a great recipe.
