“Human limitation” is encoded in the dna, so monsterfying would result in the mutation that nullifies or mutates human dna transforming people to monsters, saitama throughout the manga/webcomic has consistently been shown to be the outlier, and so I don’t see the monster cells taking ahold of him.

I’d imagine Saitama IS already a monster by technicality, his transformation coming from his obsession to become a strong hero but since his motivation was noble and wasn’t at the expense of others he didn’t become a full monster, i guess that’s why Garou didn’t become as strong as Saitama, while his goal had good intentions he still wanted to become the ultimate monster so the world was forced to unite against him
