1.5 lb of yuca
8oz of Mozzarella Cheese
4-5 cups of water
1/2tsp of salt
1/2tsp of sugar
1/4 tsp of back pepper
1tbsp of butter
1 egg

1 cup of panko
1tsp salt
1tsp of black pepper
1tsp paprika
1/2tsp garlic powder
1/2tsp onion powder

1)Cut and peel the yuca. If you’re using fresh yuca make sure to rinse it.
2)Boil the yuca in 4 cups of water with a pinch of salt. Let it boil for 20 to 30 minutes. Check on the tenderness of the yuca with the fork.
3)Once tender strain and set aside for it to cool.
4)Once cooled, remove the core add your 1tsp of salt, 1tsp of sugar, 1/4 tsp of black pepper and 1tsp butter, mix with a hand mixer until it reaches a doughy consistency.
5)Grab your favorite Panko add the rest of the ingredients 1 tsp salt, 1 tsp pepper, 1 tsp paprika, 1/2 tsp onion powder, 1/2 tsp garlic powder, and mix well.
6)Next, we will move onto making the cheeseballs grab some of the yucca dough, flatten it out like a tortilla, place your mozzarella cheese in the middle seal and roll the yuca into balls.
5)Cover yuca balls in the egg wash and then your Panko and they are ready to air fry or deep fry for air frying, set air fryer to 350°F and air fry for 10-15min
