Paul Ainsworth started his career as a kitchen porter and he believes most great chefs take a similar path. “They know what it's like to be at the sink, if they understand the pressure, balance and demand of that role, then you've got what it takes to be a chef”.
Paul confides that a KP is one of the most valuable members of the kitchen. “You don't know good something is, until it's gone. Respect them and they'll respect you.”
Paul goes on to tell us about his KP, the big smiling Cockney; Alfie. If Alfie is happy Paul is happy. “He loves our business as much as we do”.
What higher praise could there be?
