I like how the music changed from extremely ominous folk to highly upbeat after Townsends eats it, as if the combination of cheese and bread was in doubt until the very moment of tasting.

A quick warning.

If there is ANY Mold on the bread... throw the bread away. Don't just try to cut off the visible mold.
Only a small part of the mold, is green and visible. The rest of the mold is oftentimes the same color as bread, and therefor invisible. Eating it can be hazardous to your health. So if you see any visible mold spots, throw the entire piece of bread away.

If its just dried out, but not moldy... it might be fine.

Just wanted to say I made an absolutely splendid soup by taking this simple recipe and running with it. I used sourdough bread, a mix of Gruyère and Parmesano Reggiano for the cheese, used 5 cups water and 2 cups apple cider as the base, then added two baked onions that had been diced up (based on John’s baked onion video) and some sun dried heirloom tomatoes. Then we used diced scallions as the garnish and sprinkled bacon bits on top and served it with sippets of sourdough toast. I think it’s one of the best soups I ever ate.

i love how depressed John looks in the thumbnail, like "well, it's finally come down to this. A chunk of old cheese and stale bread. not even any nutmeg..." *starts sobbing*

This soup saved me when I have a tooth infection and couldn’t eat anything! It’s smooth enough that the bread can be slurped pass the painful sores of the mouth but filling with its carbs. Plus the saltiness helps reduce inflammation. Thank you Townsend!

Gotta say, when the video started, and he said he was going to make a dish out of cheese and bread, I instantly thought, "He's just saying that. He'll end up adding 1400 other ingredients, like a crap-ton of seasonings, herbs, milk... basically anything that 'wouldn't count' as main ingredients." But, he didn't. I'm impressed!
