In this video, We discuss how we dehydrate early honey. Meaning reducing the moisture content in honey that is not capped. The bees will naturally do this if allowed the time, however we like to extract around 5 gallons of our early batch. It is usually lighter in color and makes a beautiful product and brings a premium price in our area. But in the end its just an early batch of wildflower honey. Very nice setup you have Craig. A refractometer is a priceless piece of equipment for anyone bottling honey. They're great for brewing beer also. 😁I should have written it down but if I remember correctly I was at 15%-16% moisture content last year. It was some thick Honey! Thanks for sharing.

I do about the same thing, only I don't have to worry about SHB here in MN. When you drop the moisture down to 16% or lower the honey flavor intensifies and it is nice not to have to worry about fermentation. Thanks for the video Craig.
