I promise you this will be one the most talk about corned beef sandwiches you will ever have!! This sandwich is sooo delicious I actually had someone tell they almost cried from the perfect gathering of flavors!! The marinated brisket, cabbage and onions, swiss cheese sauce just comes together so lovingly you won't want to share with anyone! It'll make you go to a corner alone so you won't be disturbed while your senses take in every little bit of pleasure this sandwich has to offer!!

Let's create this phenomenon!
CORNED BEEF BRISKET
1 Corned Beef Brisket
Combined the following spices for marinade:
3 Tblsp Tomato Bouillon
2 Tblsp Smoked Paprika
1 Tblsp Smoked Garlic
1 Tblsp Onion Powder
1 Tblsp Black Pepper
1 Tblsp Sea Salt
3 Tblsp oil for searing

Mix spices in bowl, jar or whatever you have, rub generously on all sides of brisket, let marinade for at least 1/2hr or overnight if possible.
Heat a large skillet until it starts to smoke, add oil, add brisket. Gently press brisket into pan for a more even browning. Let brisket brown on each side 3-4 mins or until you have a nice dark sear. Flip to brown brisket on each side.

AEROMATICS (Moisture Mix)
2 Tblsp dried Rosemary
1 Tblsp Thyme
1 Tblsp Oregano
Add herbs and 2 cups of water to pressure cooker.
Use grate to elevate brisket above moisture mix.
Set pressure cooker to meat setting for 1 hr. After 1st hr timer, release pressure, uncover, let pressure cooker cool for about 5 mins, reseal and cook meat for another 45mins. Corned beef can rest in pressured cooker after 2nd timer goes off for an additional 15mins to help retain juices while slicing.

TOPPINGS
1/2 Napa Cabbage thinly sliced
1/2 white onion thinly sliced
1/4 Tsp each of Garlic Powder, Black Pepper and Salt
1 Tblsp oil, veggie, corn or whatever oil you like

Warm oil in skillet on medium heat, add veggies, gently stir to coat veggies with oil, cover for 2 mins. Remove lid, stir again, cover for an additional minute. Add seasonings stir until veggies are beginning to brown, turn heat off, cover and set aside.

Swiss Cheese Sauce
1 pad of butter
1/2 Tbsp All Purpose Flour
1 cup Heavy Cream or Whipping Cream (or you can use whole milk)
1 tsp sea salt
1/2 Garlic Powder
1/2 Black Pepper
1 Tblsp ground mustard
1 1/2- 2 cups Swiss Cheese grated or shredded

Melt butter in skillet on low, slowly so it will not burn, add flour. Stir constantly, scrape bottom and sides to make sure all flour is completely mixed with butter. Constantly stir until mixture starts to darken, add milk. Mix milk with flour mixture using back of spoon to assist with smoothing any lumps or a whisk can be used.
Continue stirring until milk mixture starts to thicken reduce heat. Turn heat off to avoid burning or breaking cream. Add all spices mix well. Add 1 cup of the Swiss cheese, turn heat back on low setting, stir cheese until it melts, add more cheese as desired. Stir until cheese is completely melted, remove from heat. Set aside.

AND NOW THE PHENOMENUM
Remove corned beef from pressure cooker
Slice to desired thickness
Add slices to bread, bun, wrap, boat or whatever your preferred sandwich vessel is.
Add corned beef, veggies, and cheese sauce.
