I have had sets of the wheels for over 25 They were called the o so sharp system. I ordered more sets from jantz supply in Davis Oklahoma . I refurbish my wheels with more grit and cut grooves in the polishing wheel when they wear out. Good luck on your sharpening adventures!!!!

I've always tried to sharpen knives since I was a kid (I'm 57) but could never get them more than basic sharp, using stones, 1x30 belt sander belts, etc. When I saw this video, I started to order a set online, but found out Grizzly tools have them so I drove to their store in Springfield MO and purchased a set of these. This works so well for me, I have every knife in my house sharpened RAZOR sharp, easily shave hair off my arm and cut thin curls of sliced paper. Some of my knives are good ones, some are not so good quality, but I can sharpen them all now. I'm very sparing with the grit wheel, have only used it a couple times. I sharpened a filet/boning knife with the honing wheel for my brother and he was raving about how easily he could butcher a deer, using the phrase "hot knife through butter". He's 67 y/o and said he's never been able to butcher a deer this easily, and is telling everyone about these. Thanks for the video!!!

I've used the paper wheels for many years. It's so quick, that it makes it my number one form of sharpening. I can get knives much sharper with my japanese water stones and some time stropping. But a pass or two (less than a minute) with these wheels gets my knives plenty sharp for any purpose. And beats all the time spent with other methods.

As an old retired butcher, I never remember an angle. I used a long steel, them a leather strap with some rouge on occasion. Kept my knives sharp for 30+ years and never once used a machine. Time, patience and the knowledge of the blade is all that is needed.

Nice video. I agree to a point with what some of these fine men have said about using a grinder to sharpen a knife. I made a living for 15 years boneing hams in a slaughter house. I say this to point out I do know what I am talking about. If you dont get the blade hot then these paper wheels work pretty good. You might want to make a jig to keep same degree with each pass. I was lucky enough to be able to use a 42 inch wet wheel to put the beval on then finish fine tuneing with fine wet stone. Keeping the edge took lots of passes on a good steel. The steels job was to straighten out the edge. Lots of people think that if your knife will shave hair on your arm that it is sharp. Well yes it is but with that fine of edge iit won't last long, roll over ! The trick to keeping your blade sharp is the same constant bevel on both sides and keeping them in line. Not rolled over. Getting your still worked just right is as important as putting the edge on your blade. Hope this has helped out some of you ? I may not be an expert but I am very good at putting an edge on and keeping it in line. Have a nice day

again...nice attitude!.. I have sharpened professionally since 1994 for the largest meat packing company in Canada. I have also owned and operated a sharpening business out of my home shop for as long. I use a lot of different tools and methods to get top results. When you have sharpened a million knives like I have then you can flip me some attitude. This conversation is over tinkerbell

these in the 80's were call O SO SHARP i bought mine at a survival fair and the wax was called BEAR grease i turned my grinder around so it spins away from me and i work off the top good system and they will come out razor sharp

I love sharp knives in the kitchen & learned how to use the manual steel sharpening rod, then sharpening stones & have had my share of 'owies' and unevenly sharpened knives-consistent angle sharpening is key & takes practice! Desiring something similar to what a local butcher uses in his shop I sprang for a Smith's Diamond Edge Pro complete with 'after machine sharpening honers' and I get the same sharpness as whenever I've let them machine sharpen for me. I'd recommend it to most home cooks.

That might be a new product for him, but that kind of wheel has been around for it least 30 years or longer.  I had a Rambo knife, the blade was painted army green and I took it to a guy that had one of those wheels.  He took the paint off with that wheel and polished up with that wheel and made it look like a chrome plated knife.  It put a razor shape edge on it, that lasted for several years.

I'm a big supporter of this system and have used it over 10 years. Would like to state that these are just cardboard disks, not grinder stones. They won't explode like some have suggested.I mostly use the slotted disk and all you are doing is power stropping the edge to a mirror finish. Very little material removal. This method works great but you do need to practice. I use a foot-switch and mark the wheel sides with a Sharpie to show angles from 0 to 40 degrees as a static reference.

Bear that in mind when using stones as well, do not rub the crap up and down the edge, makes it worse

You have the beginnings of a really good knife sharpening system. The only negative thing i can say is that you need a good repeatable edge sharpening system. You are on to something here. Keep going with it.

Yep, your grinder sounded like it might have bearing issues. My grandfather, wise country man that he was said you should sharpen the same number of times to each side of the blade. (5 strokes on each side, for example). This helps keep you from removing too much material from any one side. You have no way of ensuring a consistent sharpening angle for the blade edge. You need a rest or guide to assist with this.
Lastly, make sure the manufacture's recommended RPM's are followed as I've seen various wheel materials disintegrate with repeated bumps, improper sharpening techniques or age. Good luck!

"Catra V140" A medium production unit utilizing Cubic Boron Nitride abrasive coated steel wheels and now, offering the best in diamond coatings! Not what I would call the most attainable solution for us average bears but some of us have to rub elbows with the elite specialists in the industry! At your level, it's not about knives, only the sharpness that can be attained. It's nice that you don't have to spend much time at it with that machine. I am retired & just sharpen as a hobby. :-)

Dude regardless of what all the self-proclaimed knife shapers say...if you can get a cheap $6.00 Wal-Mart knife to cut like a 300.00...uh, it's a "No Brainer"...I'm. following your tips and advice...and hell even if it goes dull after a week or so, I'm only a step or two away from heading back out to the "Ol' sharpering shed...
