My wife is Russian, and she makes the best borsch. My family which never had it before absolutely LOVE it! Such a healthy soup. A dollap of sour cream is a must, and dark bread with mustard. The differences I see in how you make it, and how she makes it, is that she also fries the cabbage, and uses a grater to cut the beets and carrots. By the way, my wife IS babushka. ))

It’s also good to add a dollop of sour cream to a bowl of borsch ;)) And you’re right: it definitely tastes better the next day.

I learnt how to cook borsch in our housekeeping classes (уроки труда) when I was around 9. And that’s the only way I’ve been cooking it my whole life 😂 I wouldn’t accept any other recipes, even my mum’s.

Btw. try to put the seasonings (the pepper, bay leaf, etc.) to boil with the meat together from the beginning next time. The soup will have a better taste, because the flavours of the sasonings will have more time to get into the soup.

Thank you for filming this borscht recipe. I haven't seen full-sized carrots in years. When I buy them, I usually get baby carrots. No peeling, no cutting, just rinse them. Maybe I'm just lazy when it comes to carrot preparation. I've noticed not seeing any dishwashers in your cooking videos. Perhaps they're not common in Russia. One day I will try marvelous, tasty borscht.😊

The borscht looks good - I will give it a try if I can find the beet root. Things taste better after a day or two in the refrigerator because the flavors go through the vegetables and sauce and distribute themselves more evenly throughout.

So the Russian countryside is full of mushrooms, wouldn't it be permissible to slice some up and put them into the soup too?

Hope to see you do shashlik and pelmeni/vereniki too, and maybe model some женское белье for us!

As a child growing up here in Canada my Canadian friend who lived down the street from me was Ukrainian and his mother made Borscht but also added sour cream to it. I don't know if they added it to the pot or separately but they did include sour cream in their recipe. Was this a Ukrainian recipe or do Russians also use sour cream too?

1:22 - 😲 I am no expert, but I have never heard about ketchup and baked bean being part of the ingredients for borshch soup. But hey, Russia is big country, as well as Ukraine, and I know that there are different recipes for this soup that varies from town to town, or oblast to oblast. Even in such a small country as Slovakia is, there are different recipes for their national cabbage soup in different parts of the country, then why not to use baked beans in borschch somewhere in Russia :)
