BUHDA BOWL WITH PEANUT SAUCE
Ingredients:
Cooked brown rice
MARINATED TOFU
20oz vacuum sealed extra firm tofu
4 Tbsp liquid aminos
3 tbsp rice vinegar
1 tbsp maple syrup
1/2 tsp garlic powder
1/2 tsp ground ginger
1 tsp sesame oil ( I forgot to add it while recording 😅 )
Oil to sauté the tofu
BAKED SWEET POTATOES
2 medium size garnet potatoes
1/4 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
ROASTED BRUSSEL SPROUTS
1lb brussel sprouts
1/4 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
SAUTÉED KALE
1 bunch of kale ( washed and chopped )
1 tbsp olive oil
1/4 tsp black pepper
1/4 tsp garlic powder
PEANUT SAUCE
1 cup crunchy peanut butter
1/4 cup rice vine
1/2 cup maple syrup
1/4 tsp ground ginger
1/4 liquid aminos ( you can also use low sodium soy sauce, I didn’t have any on hand )
6 + tbsp vegan alternative milk
(If too thin add more peanut butter, if too thick add more milk and maple syrup)
OPTIONAL TOPPINGS
Avocado
Chopped green onion
Chopped cilantro
Diced bell pepper
