A perfect way to use leftover roast or rotisserie chicken.

Turkey / Chicken Salad

2 cups of turkey, or chicken, shredded
1 celery stalk, minced
1 small shallot, minced (or chives)
1/4 of a bell pepper, minced (any color pepper is fine)
salt and pepper to taste
Dressing:
1/2 cup mayonnaise
1 teaspoon dijon mustard
1 tablespoon of white vinegar

In a medium sized bowl; mix turkey, celery, shallot and bell pepper together.
In a seperate smaller bowl, mix the dressing ingredients together and pour over the turkey mixture. Taste and adjust seasoning. Serve with crackers or bread.
