DIY mung beans noodle! #shorts

This is a popular dish from Sichuan and served cold to fight the hot climate! It was so fun to make and you could literally use 2 ingredients to make your own noodles! If you don’t want to make your own starch you could also buy it at your local Chinese store or online.

NOODLES INGREDIENTS:

1 x kg mung beans
Water

- Cover with water and soak your mung beans over night
- Blend and strain
- Let sit over night until your starch is fully deposited at the bottom of a bowl
- Drain the water and reserve the white starch at the bottom
- Dehydrate the starch for 20 minutes and blend until you have a fine powder
- Mix the starch with 200 ml of water and add to 1 LT of simmering water. Mix until dense and let sit until completely cooled down
- Use a greater or noodle grater to make your noodles

STIR FRY INGREDIENTS:

2 x spring onions top
1/2 x cauliflowers floret
1 x carrot
Grated ginger
1 x garlic clove
Soy sauce
Sesame seeds

SAUCE INGREDIENTS:

1 x tsp miso paste
Soy sauce
1 x lime juiced
Agave

I cannot handle the texture of those noodles, sadly, it's just not for me, but I will 100% take this opportunity to appreciate the heck outta this dish! Edit: for context, I'm underage and live in a very wasteful household because a certain stubborn person here will not stop making feasts for every meal of the day (a pot of food gets thrown out every week after it goes bad in the fridge) and the second one will not stop buying stuff mindlessly (food in the fridge is overshadowed by the new food, goes bad then it's thrown out). Also I never get out of the house anyway. I'm in no position to say I'm the good person in here cause I refuse to eat many things / instead of eating what's in the fridge I go for the jar food or instant food we had in cargo for years. It's an endless cycle tbh. And it makes me so ashamed. I'd like to stop it but I'm slightly powerless against it. I can't keep a garden cause I made a goddamn cactus dry out, besides we don't have a reasonable place for that in out backyard. I can't keep reusable bits in jars because we don't have space for it (our entire garage is filled with clothes to the point it looks like a hoarder house, you think I have space for jars? Entire wardrobes filled with jars for pickles made for winter that were made wrong and taste horrible so are thrown out as well. Entire shelves full of unrecognizable jam made from mystery fruit and it's never used. Shelves full of mushrooms and pears in vinegar, apple ciders, fucking 30 litres of worthless, disgusting homemade wine sitting away in 30+ bottles stuffed into wherewer it could be stuffed. Boots thrown around the place because there's no goddamn space for them. Drawers full of whatever the hell was in our pockets at the time... it's a mess. The only space I'd have for jars would be my own room but that'd be slightly weird, even then I barely have space. Not to mention 90% of our empty jars (also stored away in the fucking wardrobe) stink of said bad pickles and it's driving me crazy tbh.) And I'm so goddamn ashamed of how much trash we produce, of how much shit we buy, of how much food we throw out. It's nauseating. I'm powerless against these forces man and it feels so horrible. What do I even beging with when when I tell a person "No, I don't want the soup" they bring it anyway? When I say "No... don't buy this, we don't need it" they buy it anyway? What am I supposed to do when a person wastes 5 goddamn buns, frying them, thinking they were meatballs? (real story) what the hell do I do?! What do I do when they can't understand I fast and don't need that much food, sometimes not wanting to eat anything for the entire day, only for the fridge to be full to the brim, knowing only one person eats normally in the house? It makes me feel horrible, am I even trying? I always end up eating whatever ready shit I can find as well. An endless cycle, I tell ya. Makes me fucking sick.

In our country (Philippines) we called this monggo. When i was young we boiled it until it becomes more tender then put some sugar woalla! Instant sweet snack.
