Two problems I have with notes being searchable:
a.) Horrible handwriting
b.) Non-standard characters (I write shorthand/stenography sometimes).
My solution for this, especially in longer notes (lecutres, longer meeting minutae): Use clean, clearly written headings (or side-notes when using the Cornell method). I also write quick, typed summaries or 'most important points' in front of the handwritten notes in Evernote (I also do that for articles, E-books and saved Youtube videos. This comes in handy when reviewing or searching for notes).

I agree with you. Search is a great strength of Evernote and ironically, note taking is it’s major weakness. For handwritten notes and sketching on the iPad, I use Noteshelf 2 which is set up to auto-publish in Evernote. I use Evernote as a digital filing cabinet and search engine, don’t really think of it as a note taking app. I haven’t used a paper notebook in years!

I use for my little headstone company goodnotes 5. There is no better app that makes handwriting and documenting so easy. And the whole app is searchable, inluding the handwritings. Its an killer app. I use it daily for my clients work

Carl...does Evernote come with 'grab image text' from pic feature as we see in Google Keep? If so, how to use that?

OneNote, handwriting has been working great under Windoze since about 2009... ...

I'll have to experiment a bit to see if the handwriting recognition works with my very sloppy handwriting, and a different language from English (Dutch) . I recently discovered that the Google keyboard on my phone and tablet actually can decypher my scribblings. So as an in between approach I enter notes in handwriting via the keyboard so they are saved as text rather than as an image.
By the way, as this is my first comment, many thanks for all your Evernote and Todoist videos. Greetings from a fellow left handed fountain pen lover (this has its own challenges 🖋️😁).
