I love all your recipes.
As a Mexican I have to tell you, those aren't enchiladas. Those are chimichangas.
The enchiladas are with fried corn tortilla and a little soaked with salsa verde, shredded chicken, cheese, cream and onion. Bathed with more salsa verde.
